As I write this, I am almost 19 weeks pregnant with my first child. So I know how you feel. Even for someone super organised, who loves spending hours doing research, Excel tables comparing the pros and cons, it is overwhelming. And if I was given $1 for everytime someone well-meaning told me “you have to get this type of pram, you can’t call them that or you must do this”, my unborn child would have a very healthy trust fund.

This recipe is perfect for the coming winter months. It is best served warmed and with a bit of natural yoghurt as a treat. It contains healthy, slow release carbs (brown rice) healthy fats & minerals (coconut milk) natural sugar (date puree) & dietary fibre & protein (Chia Seeds). Adding the cacao powder and desiccated coconut just gives it that bit more of a yummy treat aesthetic that your kids will be sure to love. The ingredients I have used make it Gluten & Dairy free so it is suitable for the little ones who have food intolerances or sens
I like to make this yummy parfait with my little boy. He loves to choose which layers to add, and when it’s ready, we eat it together on a picnic rug out on our patio. It’s great for special-occasion breakfasts, such as Mother’s Day or a birthday, as a mid-morning snack or even dessert.
This version is dairy free as it’s made with coconut yoghurt but you can use natural yoghurt if you prefer. The addition of chia seeds, flaxseeds, almonds and pecans means it’s high in protein. It’s also rich in calcium and essential fats and high in fibre.
